In 2005 Jacksonville Vineyards completed construction of Fiasco Winery. With its completion, our vines-to-wines Estate production capacity is in place, a significant step for us. Pamela and Dave are dedicated to grape growing and wine making in exactly the styles and high quality methods learned through years of study with vineyards and wineries locally, in Europe, and in Australia.

With the Winery’s completion, and our third grape harvest of 2005, our first Estate wines are being produced. We determined very early on in both our vineyards and our winery that we would use only the best materials and processes available in all of our practices – “from the vineyards to the labels”. All of our wines are aged in 100% French oak barrels, some briefly, like our Blush Syrah or White Zin, while others like our barrel fermented Chardonnay, our Claret and Cabernet Sauvignon, are aged for extended years in French oak.
